Ingredients
4 servings
- flour, sieved2 cups
- sugar1 cup
- tsps baking powder2
- salt0.5 tsp
- eggs, lightly beaten2
- oil0.3 cup
- butter, melted0.3 cup
- milk0.8 cup
- vanilla essence1 tsp
- frozen or dried blueberries, tossed with 3 tbsp flour to coat the blueberries (so it won't sink to the bottom when cooked)1.5 cups
- sugar1 cup
- lemon zest of 2 lemons
Instructions
- 1.
Sieve the flour and baking powder together.
- 2.
Add in the sugar and salt into the flour.
- 3.
Mix all the wet ingredients in a separate bowl.
- 4.
Now, put the wet ingredients into the dry ingredients. Do not over mix.
- 5.
Fold in the blueberries, just to combine.
- 6.
Spoon the batter 3/4 full into greased muffin tins.
- 7.
Combine sugar & lemon zest. Sprinkle over muffins.
- 8.
Bake muffins for 30 mintues in a preheated 180ºC oven.
