Ingredients
- eggs, beaten3 large
- milk2 tbsp
- oil2 tbsp
- butter1 tbsp
- salt1 tsp
- pepper1 tsp
- prawns, cleaned & skinned0.5 cup
- onion, sliced1 large
- red chilli, sliced1
- birds-eye chilli, sliced2
- coriander shoots1 bunch
Instructions
- 1.
Beat the eggs with salt, pepper and milk till it froths.Melt butter in a 6" omelette pan.

Put in the oil.Sautee' the onions till it softens.
- 3.
The add the prawns and cook briefly.Put in both the chillies.Pour the egg mixture into the sauteed onions & chillies.Keep stirring on high heat for a few seconds.When the eggs begin to set, reduce the heat & stop stirring.Flip the omelette if desired.Enjoy while hot & steaming!
