Soto Ayam is a typical Johorean dish mostly enjoyed during functions. My family enjoy this dish as it is soupy and light. With all the rich food we eat during Hari Raya, this dish is exceptionally refreshing. If you cook this dish often enough, you will realize that it’s not so difficult to make, and you don’t need to wait for festivities to enjoy cooking and eating this dish!!To blend:
Ingredients
- shallots12
- garlic3 cloves
- ginger0.5 inch
- coriander seeds1 tbsp
- cumin seeds1 tbsp
- fennel seeds1 tbsp
- chicken, washed & cleaned1 whole
- galangal, bruised1 inch
- lemongrass, bruised4 stalks
- cloves10 cloves
- star anise3
- cinnamon sticks2
- cardamoms10
- white ground pepper1 tbsp
- ground turmeric1 tsp
- salt3 tsp
- coconut milk0.5 cup
- water8 cups
- su-un, deep fried1 handful
- handful beansprouts, cleaned & tailed2
- handful birds-eye chilies(pounded coarsely & mixed with 2 tbsp sweet soy sauce & 1 tsp vinegar)1
- Nasi Impit (Compressed Rice)
- Chinese celery, sliced finely2 stalks
- Spring onions, sliced finely2 stalks
- shallots, sliced finely and deep fried till crispy15
- potatoes (skinned, sliced thickly & deep fried)5 large
- minced beef1 handful
- white ground pepper1 tbsp
- salt3 tsp
- eggs, separated2
- garlic, sliced finely3 cloves
- shallots, sliced finely15
- Chinese celery, sliced thinly1 stalk
- spring onions, sliced thinly1 stalk
Instructions
- 1.
Boil water in a huge pot.
- 2.
Put all the above ingredients as well as the blended items into the pot of boiling water.
- 3.
As soon as the chicken is cooked thoroughly, remove it from the boiling soup and place it on a baking tray. Turn off the fire for the soup.
- 4.
Roast the chicken in a preheated oven for approximately 45 minutes to an hour.

When cool, shred the chicken into strips. In a bowl, put all the ingredients above except the egg white.
- 7.
Mash them till all the ingredients have totally interacted with each other.
- 8.
Make into patties, dip into the egg white and deep fry till golden brown.
- 9.
Lift from oil & drain. Delicious eaten on it’s own……but soto can’t be eaten without it!
